To explore the traditional Odia cuisines and its significances, one must not forget to unveil the deliciousness of ‘PAKHALA’. It is essentially a dish made with rice that is soaked in water and fermented overnight. It is usually served with a variety of side dishes, including fried fish, roasted vegetables, badi chura (coarse mixture of sun-dried lentil dumplings), Baingan Bharta and Aloo Bharta, curd, and other fried dishes.
It is especially popular during the hot and humid summer months when the cool and tangy flavor of Pakhala helps to beat the heat and is enjoyed by people of all ages and genders.
In recent years, Pakhala has gained widespread popularity beyond Odisha, as more and more people discover the unique taste and health benefits of this traditional dish.
On March 20th, every year people celebrate ‘World Pakhala Dibasa’. This year, the Swosti Group is also celebrating this tradition by serving Pakhala at their hotels in Bhubaneswar. Saga Bhaja: A simple green garden fresh leaf fried with onion and garlic in a traditional mouthwatering flavor of Odia delicacy.
ALOO BHARTA: – A spicy smashed potato dish with a delicious flavor from grandmother’s kitchen in Odisha.
BAINGAN BHARTA: – A grilled eggplant dish mixed with grilled tomato along with garlic, green chilly & onion with a traditional taste from the Odia delicacy.
